Professional cooking students create winning dishes

Two students from our Diploma in Professional Cooking course at our Moston Campus have excelled in recent culinary competitions.

Gideon Ingham, 17, has just won gold at the Culinary Skills Olympics for trainees at the Buxton Campus of the University of Derby. His menu was: duo of langoustines with ricotta gnocchi and curly kale puree, and best end of lamb with fondant potato, kidney pie, broad beans and lamb jus. Gideon’s prize, alongside book vouchers, was a week of work experience at Michelin starred restaurant 1 Lombard Street, in London.

Gideon said: ‘I was nervous at the start of the competition, but I soon relaxed and it went ok. I was really happy with my dishes and delighted to have won. I’m really looking foreword to the placement at 1 Lombard Street.’

Also bringing home a prize is Linsey Wigglesworth, 22, who won silver at the Association Culinaire Francaise North West Pastry Chef of the Year Competition in March. The competition, organised by the ACF North West branch was held at Blackburn College and students from nine colleges across the region competed. Linsey prepared two fantastic desserts; fresh lemon tart with raspberry ripple ice cream and raspberry texture, and pear and apple Charlotte with chocolate water mousse and pulled sugared hazelnuts.

Linsey said: “My dishes turned out great and I am proud to have won silver.’

Their tutor is very proud of their achievement: ‘I am very pleased with the work the students have done this year; they have spent a lot of time and effort practising for these competitions and it showed. The judges were really impressed with the techniques the students had and the way they cooked, which is due to the great new equipment we have in the kitchen at college,’ said Howard Wallace, hospitality and catering tutor at The Manchester College.
