What's the General Patisserie and Confectionery course about?
The aim of this course is to enable individuals to develop the knowledge skills and understanding needed to produce patisserie and confectionery products to a professional standard.
The course covers cooking and presenting:
- Hot, cold and frozen desserts
- Bread and dough products
- Batter products
- Biscuit, cake and sponges
- Paste products
- Petits fours
- Producing display pieces and decorative products
- Patisserie knowledge
In addition to creating and presenting a range of food products, the course also covers:
- Food hygiene
- Health and Safety
The course is assessed through internal assessment, and internal and external moderation.
What will I be able to do after I've completed this course?
All of the units in this qualification also appear in the ABC Level 3 Diploma in Professional Patisserie and Confectionery. Learners who complete units in this qualification may wish to add other units from this to gain the larger qualification.
After completing this course you can progress into employment in the catering and hospitality industries.
What qualifications or experience do I need to do this course?
Ideally, applicants will have completed the ABC Level 2 Certificate in General Patisserie and Confectionery or the ABC Level 2 Certificate for Pastry Chefs and Patissiers, or have previous experience gained in industry or from other relevant qualifications.
Which qualification will I be awarded if I successfully complete the General Patisserie and Confectionery course?
You will be awarded the ABC Level 3 Certificate in General Patisserie and Confectionery.
