What's the Advanced Food Hygiene course about?

This Advanced Food Hygiene course is designed for managers and supervisors and senior hygiene personnel who have responsibility for food hygiene in food premises. It is accredited by the Chartered Institute of Environmental Health (CIEH), a nationally recognised awarding body for the hospitality and catering industry.

Areas covered by the course include:
- Bacteriology
- Food-borne illnesses
- Physical contamination of food
- Food storage, temperature control and preservation
- Design and construction of food premises and equipment
- Cleaning and disinfection
- Pest control
- Personal hygiene
- Training strategies
- Legislation
- Management control techniques

You will complete two workplace assignments and a two and half hour written exam.

What will I be able to do after I've completed this course?

After completing the Advanced Food Hygiene course at The Manchester College, you could teach on the CIEH Award in Food Safety in Catering and it will enable you to advise in the management of hygiene in food premises. You will also be in a position to promote and encourage good standards and a high level of training within food premises.

What qualifications or experience do I need to do this course?

You will need an intermediate level food hygiene certificate, such as the CIEH Award in Supervising Food Safety in Catering, and you must be working in food premises.

Which qualification will I be awarded if I successfully complete the Advanced Food Hygiene course?

You will be awarded the Award in Managing Food Safety in Catering at level 4 by the Chartered Institute of Environmental Health (CIEH).
